Savory Roast Chicken

Ingredients

  • 1 whole chicken (~4–5 lbs), giblets removed
  • 2 lemons, halved
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt (optional)
  • Freshly ground black pepper, to taste
  • 1 cup low-sodium chicken broth (for basting)

Instructions

  • Preheat your oven to 375°F (190°C). Place a roasting rack in a large roasting pan.
  • Pat the chicken dry with paper towels, then season the cavity with salt (if using) and pepper. Stuff the cavity with the halved lemons.
  • In a small bowl, mix the minced garlic, rosemary, thyme, paprika, salt (optional), and pepper. Rub this mixture all over the chicken, including under the skin if possible, for maximum flavor.
  • Place the chicken on the roasting rack, breast-side up. Pour the chicken broth into the bottom of the roasting pan.
  • Roast the chicken in the preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh (avoiding the bone).
  • Baste the chicken every 20–30 minutes with the pan juices to keep it moist.
  • Once fully cooked, remove the chicken from the oven and let it rest for 10–15 minutes before carving. Serve warm.
