This hearty, flavorful bowl brings together oven-baked turkey meatballs, tender roasted sweet potato, and fresh greens for a balanced Phase 4 meal. The meatballs are simple to make with garlic and herbs, and the lemon vinaigrette ties everything together with bright, clean flavor. It’s a satisfying lunch or dinner that feels gourmet without extra effort.

Ingredients

Women’s Serving (~440 kcal)

  • Turkey Meatballs:

    • 4 lean turkey meatballs (see method below)

  • Bowl Components:

    • ½ cup roasted sweet potato cubes

    • 2 cups mixed greens

    • 1–2 tsp lemon juice

Simple Turkey Meatballs (base recipe)

  • 1 lb lean ground turkey

  • 1–2 cloves garlic, minced

  • ½–1 tsp salt

  • 1–2 tsp dried herbs (Italian blend, parsley, basil, or oregano)

  • Optional: black pepper, onion powder

Roasted Sweet Potatoes

  • 1–2 sweet potatoes, peeled and cubed

  • Pink salt and pepper (no oil needed if roasting dry, or use 1 tsp olive oil per full batch if desired for Phase 4)

Instructions

Make the Turkey Meatballs

  1. Preheat oven to 400°F (204°C).

  2. Mix ground turkey with garlic, salt, herbs, and optional seasonings.

  3. Form into 1.5–2 inch meatballs and place on a lined baking sheet.

  4. Bake for 15–18 minutes, or until cooked through.

Roast the Sweet Potatoes

  1. Preheat oven to 425°F (218°C).

  2. Spread sweet potato cubes on a baking sheet.

  3. Season with salt and pepper. Add a light drizzle of olive oil only for Phase 4 if you choose.

  4. Roast for 20–22 minutes, flipping halfway.

Assemble the Bowls

  1. Add greens to the bowl.

  2. Top with roasted sweet potato and meatballs.

  3. Drizzle with olive oil and lemon juice.

  4. Season to taste and serve warm.

  • Add chopped fresh parsley or basil to brighten the bowl.
