  • ½ cup finely shredded carrots (squeeze out excess moisture)

  • ½ cup approved nuts or seeds (crushed walnuts or sunflower seeds work well)

  • ⅛ tsp ground ginger

  • 1 tbsp lemon juice

  • 2 tbsp unsweetened applesauce (or 1 finely diced apple)

  • 1 packet stevia (or to taste)

  • ½ tsp vanilla extract

  • ¼ tsp pink salt

  • 1 tbsp coconut flour (only if needed for texture)

Instructions

  1. Shred the carrots finely and pat dry with a paper towel.

  2. In a bowl, combine all ingredients and mix until a dough forms.

  3. If the mixture is too wet, add a little coconut flour until the consistency is firm enough to roll.

  4. Roll into small bite-sized balls and place on parchment paper.
