These Phase 2-friendly Egg Bites are the perfect make-ahead breakfast or snack for busy holiday mornings. With three simple and delicious flavor combinations, you can enjoy variety while staying on track.

Egg Bites

Base Ingredients

  • 6 large eggs
  • 1/4 cup unsweetened almond milk
  • Salt and pepper, to taste
  • Non-stick spray or liners for a muffin tin

Flavor Variations                                            

Spinach & Garlic

  • 1/4 cup fresh spinach, chopped
  • 1 clove garlic, minced
  • Optional: Pinch of nutmeg for added depth

Tomato & Basil

  • 1/4 cup cherry tomatoes, diced
  • 1 tablespoon fresh basil, chopped
  • Optional: Pinch of dried oregano

Bell Pepper & Chive

  • 1/4 cup diced bell peppers (any color)
  • 1 tablespoon fresh chives, chopped
  • Optional: Dash of smoked paprika for extra flavor

Instructions

  • Preheat the oven to 350°F (175°C) and prepare a muffin tin with non-stick spray or liners.
  • In a medium bowl, whisk together the eggs, almond milk, salt, and pepper until well combined.
  • Divide the egg mixture evenly among 6 muffin cups.
  • Add the ingredients for your chosen flavor(s) into each muffin cup, mixing slightly to distribute.
  • Bake in the preheated oven for 20–25 minutes, or until the egg bites are set and lightly golden on top.
  • Allow to cool slightly before removing from the tin. Serve warm or store in an airtight container in the refrigerator for up to 4 days.
