Egg Bites
Base Ingredients
- 6 large eggs
- 1/4 cup unsweetened almond milk
- Salt and pepper, to taste
- Non-stick spray or liners for a muffin tin
Flavor Variations
Spinach & Garlic
- 1/4 cup fresh spinach, chopped
- 1 clove garlic, minced
- Optional: Pinch of nutmeg for added depth
Tomato & Basil
- 1/4 cup cherry tomatoes, diced
- 1 tablespoon fresh basil, chopped
- Optional: Pinch of dried oregano
Bell Pepper & Chive
- 1/4 cup diced bell peppers (any color)
- 1 tablespoon fresh chives, chopped
- Optional: Dash of smoked paprika for extra flavor
Instructions
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with non-stick spray or liners.
- In a medium bowl, whisk together the eggs, almond milk, salt, and pepper until well combined.
- Divide the egg mixture evenly among 6 muffin cups.
- Add the ingredients for your chosen flavor(s) into each muffin cup, mixing slightly to distribute.
- Bake in the preheated oven for 20–25 minutes, or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before removing from the tin. Serve warm or store in an airtight container in the refrigerator for up to 4 days.
