Ingredients

Women’s Serving (~320 kcal)

  • 2 large eggs

  • 1 cup fresh spinach

  • ¼ avocado, sliced

  • Pink salt and black pepper to taste

  • Optional: chopped herbs (parsley, chives), garlic powder, or onion powder

Men’s Serving (~400 kcal)

  • 3 large eggs

  • 1½ cups fresh spinach

  • ½ avocado, sliced

  • Pink salt and black pepper to taste

  • Optional: herbs or light seasonings

Instructions

  1. Heat a small nonstick pan over medium-low heat. Add the spinach and sauté until just wilted.

  2. Whisk the eggs in a bowl with a pinch of salt.

  3. Pour the eggs into the pan with the spinach.

  4. Gently scramble, pushing the eggs from the edges toward the center until softly set.

  5. Transfer to a plate and top with sliced avocado.

  6. Add herbs or additional seasonings if desired.
